The last weekend my mom was here we went to Gilleleje, a little fishing town about an hour and a half from Copenhagen, and stayed at Gilleleje Badhotel. It was originally an old manor, and the Gustavian style architecture and interior design was beautiful. I especially loved their lobby which had a cozy fireplace, a library and an open bar. They also had a great restaurant which we ate most of our meals in and a lovely spa. We spent the weekend taking long walks along the beach, sitting in the sauna and reading books curled up in our library, which had an amazing view out to Sweden. It was a great way to end the visit, with a little rest and relaxation.

Another thing I missed on my blogging break was Easter, which was nice and quiet this year. My mom and I went for a picnic in the park and then we had a big family dinner with lots of yummy seasonal food. Last year for Easter I made some pysanky with Alexandra (who is arriving in just a few hours!), using her Ukranian family's amazing stash of wax and patterns. This year I was a lot lazier, and just displayed my tiny collection of wooden ones along with some flowers. I'm kind of obsessed with these little guys, I love the traditional folk art patterns. I'm planning on doing an Etsy shop update next month and these two will be in it, along with some other summery goodies.

The week after the wedding, when the excitement had died down a little, I spent my Easter break touring around Copenhagen with my mom and my aunt. We had amazing summery weather and I got to do all the touristy things that I usually don't have time for. It's been so great to be able to spend so much time with our family that flew in for the wedding. Mark's dad is still here after an epic trip to Egypt and my girl Alexandra hopefully arrives tomorrow (go away ash cloud) so it's been pretty crazy with visitors. In a good way, of course. I didn't take hardly any photos during Easter break and just enjoyed the time instead. But there were so many highlights from that week and the next that I thought I'd do a little list of some of the things I like lately. Maybe I'll start doing mini reviews of these things but for now, here's a list.

We are so lucky to have friends and family who pitched in to help make the food and set up the reception so that when we came back from taking photos, the place looked like this. Here's what it looked like before, if you need a reminder. And you can see how all the little crafts I did turned out too. The reception ended up being so much fun. The food went quickly, there was lots of champagne and there was just the right amount of people so that we could spend time with everyone. There were some speeches and everyone laughed and cried and (I hope) had a nice time. Then we were off to Relæ to celebrate some more. The dinner was amazing and I was really happy to see that John and Juli had the same dinner on their trip to Copenhagen last week. So now you can all see what we ate for our wedding dinner here, if you so want. And a big thank you to everyone who made our wedding day so happy, both here and all over. We are so, so lucky.

So this week I'm going to try to catch you all up so I can get back to more regular posting. I'll be posting lots more wedding photos on my Flickr when I get my computer back so I'll just post a few here. In case you haven't seen them yet, here is a peek at the city hall ceremony, which was really short but sweet, and our session with Hilda down at Kastrup Søbad. It was actually really fun to take a little break in between the ceremony and reception to be together and take some photos. Hilda was really sweet and made us feel so comfortable, which I think really shows. And there's also a little peek at some of the outfit details which I was talking about pre-wedding, including the surprise bouquet of little spring flowers that Mark made me. Next I'll post some of the details of the reception and dinner. And then I'll stop with all the wedding stuff, I promise.

Peanut Butter Brownies

My plan for this week was to do some catch up posts but with my Mac still at the computer hospital, it's a bit tricky. I will share some wedding photos soon, if you haven't seen them already and aren't sick of wedding posts yet. But maybe something sweet will tide you over for now? I made these up on the weekend and they were perfect for a grey, rainy Sunday. They are super simple to make and you can just adjust the portions to your preferences. As always, organic and/or fair trade ingredients will make your brownies taste amazing. Happy baking!

Peanut Butter Brownies

1 cup raw cane sugar
1 cup unsalted butter
1/2 cup cocoa powder
1 tbls vanilla extract
4 free range eggs
1 - 1 1/2 cups flour (depending on how cake-y you like your brownies)
1/2 tsp baking powder
1/2 tsp ground sea salt
1/2 cup natural crunchy peanut butter

1. Melt butter and mix all the ingredients together, in the listed order.
2. Bake at 350 degrees for 45 minutes - 1 hour in a greased pan.
3. Eat straight out of the pan with a mug of tea or wrap up and share with friends.

Hi friends,

I'm sorry it's been so quiet over here. Sometimes life just gets a little nutty. After weeks of post-wedding recovery, lots of family time and some technical issues, I'm slowly settling back into my normal life. Hopefully I can show you some more photos soon. I've missed you all! Photo of our shoes is by Hilda Grahnat. And did you notice that I didn't end up wearing my teacher shoes? I found these guys at a flea market for $4 dollars. It was meant to be.
