They don't have graham crackers here in Denmark, which can make things like s'mores difficult. I'd been meaning to make some for a while (this recipe looks amazing) and had tried making s'more cookies before, but I wanted something even lazier for our camp in last weekend. I had seen this idea for using Petit Ecolier cookies on Pinterest and thought I would give it a try although I was a bit skeptical. They were so tasty! And dangerously fast and easy to make. I might have even had one for breakfast.

Mark and I had planned to rent a cabin in Sweden last weekend, since he is off to Toronto and Montreal on Wednesday for a two month long clinical elective. But due to a bunch of boring logistical things like not having a car and having a cat, it didn't really work it. Being adults can be such a pain. So we had a camp in instead! We made a makeshift tent over our pull out couch using sheets and twine and set up a fake fireplace with a log channel, lots of candles and cedar incense. It actually did feel a bit like camping! Only much more comfortable. We made black bean burgers and s'mores Saturday night and apple oat pancakes for breakfast on Sunday, watched some Twin Peaks and read Kinfolk (well I did, Mark read various medical articles), and were generally super lazy and wore sweat pants and cozy knitted sweaters all weekend. Except for late Sunday afternoon when we got bundled up and went ice skating at Frederiksberg Park since it had just snowed for the first time this year. We also had a lovely family Sunday Supper, where Mark's brother and girlfriend announced their engagement! Which was then celebrated with lots of champagne and amazing homemade French onion soup. Such a good weekend! I'd highly recommend having a camp in sometime.

I've been putting off getting an iPhone for years, for all sorts of reasons, although I was often complaining about how I *needed* one. Since my old (free, hand me down) phone was starting to give out, I had promised myself a new iPhone if my residency papers went through and I found a job here. Seemed a little bit easier to justify that way. So the other morning, Mark and I biked into town to pick one up for me! We also got tea and cookies, because what goes better with treats than more treats? I'm a bit overwhelmed by all the things this little guy can do, so I'd love to hear any recommendations if you have any. And we can be Instagram friends now! My user name is elainakepplet, a hilarious mistake due to my newbie iPhone typing skills. It was the first app I downloaded and think I'll be using it all the time. It's so nice not to have to pull out my bulky camera in public. Yay, technology.

I gave Mark this little heart hand warmer in his Christmas stocking this year (I know, it was obviously more for me) but poor Tiggy has been so cold lately that he has taken it over. He loves being warm more than anything, and purrs so loudly when we tuck the hot water bottle into his blanket.

To celebrate Chinese New Year on Monday, we got some yummy dumplings from the little Asian store down the street from us. One of the things I get homesick for is good Asian food - cheap sushi, Chinatown buns and tons of little grocery stores with all kinds of interesting fruit and dried food. Growing up I always liked Chinese New Year, it seemed like kind of the last hurrah of all the winter holiday celebrations. Did anyone else get a little envelope with some money in it? Or little candies and dried coconut? What kid wouldn't like that?! I had tried making wonton soup a while ago from this recipe which I thought was really good, although I used shiitake and tofu for the filling and bok choy for the soup. It had a really wonton-y tasting broth and was so simple to make. We bought the wontons this time since I was feeling lazy, along with these New Year buns with sweet bean paste inside. They are supposed to look like peaches but I love the neon pink tops. I have a funny picture of Mark posing with them but he is being a party pooper and won't let me post them. We also finally used some of our wedding gifts cards, since they were going to expire while Mark is gone. We got a Le Creuset casserole and a Royal Copenhagen porcelain platter, hopefully we'll have them forever. Happy Year of the Dragon, friends!

Some of my best babes now have babes of their own, and two of them have birthdays in January. My buddy Nash turned three last week and lovely Lily is one today. I didn't want to leave little Celia out either, so I made her a onesie just because. One of my favourite things about being an aunt is that now I have an excuse to buy and make cute baby/kid things. I was a bit behind schedule this year for the birthdays, so these packages are still probably on their way! I know it's not very kosher to post pictures of presents before people get them, but I don't think babies are reading blogs yet. I wanted to make something that would be light enough to send and since they all most likely have plenty of toys, I settled on making shirts with iron on transfers. I bought the plain, organic cotton shirts from H&M, then printed out large grey (of course) letters in Lullaby (which I use for everything) onto the transfer paper and ironed them on. It should have been an easy project but I ended up battling with my printer and getting pretty frustrated, hence the two tones on the shirt for Lily. They aren't as perfect as I would have liked, but I hope the littles like them! I love you N, L & C.

I found that roll of film I took in London last May on a dollar store disposable camera and am finally just now getting around to scanning it in. I had hastily tucked them away in a drawer because Tiggy has a strange penchant for licking film photos, there must be something in the chemicals that he likes. So that's why there are scratches and smudges all over. I thought these ones of flowers were appropriate, this time of year it's nice to see some bright flowers. Maybe I'll show some of the rest of them soon too. It will be a while before I take more film photos, it's so expensive to have them developed here! We still have a bag full from our honeymoon. But in other news, I got a job! It's afternoons at a cafe inside the library down the street from us, so it's pretty perfect for right now. And it means that I can finally get that expensive treat that I've been wanting for myself for years...

I am probably the most boring person in the world; everything I like is grey or something equally unexciting and monochromatic. I even quite like the potentially drab grey subway tiles in our bathroom! I picked up this shirt at a thrift store when I was back home, and it's quickly become one of my favourite things to wear along with my huge cream cable cardigan and crystal necklace. I love the warm wool fabric, the strange blocked construction and the little details like the pearly grey buttons. It looks like it was made by hand almost, it's definitely not factory made, and of course I like that it is Canadian made. Great label name too, right? So funny, I guess it is from the late 80's career girl era. I also live in my grey sheepskin moccasin slippers, brought back from home again and stained with all kinds of cooking and tea spills over the years. So I guess my style is boho grandma lately? Hook me up with some Grey Gardens and Earl Grey tea and I'll be good to go. And of course my favourite grey thing of all time, Tiggy.

To celebrate Mark being done exams for this semester on Friday, we ate a lot this weekend. We had truffle pizza and a bottle of cava on Friday night, a full English breakfast Saturday morning, and for dinner I decided to recreate the ginger scallion noodles from Momofuku Noodle Bar. Being a ramen amateur, I didn't realize that they kind of explode in your stomach if you scarf a huge bowl of them, so I spent the rest of the night feeling overly stuffed and saying that I was never going to eat again. Of course, on Sunday I had the leftovers. I've been craving this dish since I had it on our honeymoon in New York and after reading a bunch of different reviews and takes on it, I came up with my own version. The original recipe calls for braised cauliflower but I had it with pickled mushrooms and thought that was much better since I liked the pickled, vinegary taste. I added a big splash of rice vinegar, to make it even more vinegary. I read a lot of people saying that it tasted too raw with all the scallions, and don't remember finding that when I had it , so I mainly used the green part of the scallion to tone it down and let it sit for a good while. I also added a fried egg to make it a more substantial dinner but I think it would be just as good without it. Sorry for the not so great photo, I am not the best photographer when hungry apparently.
Ginger Scallion Noodles with Pickled Cucumbers, Mushrooms and Fried Egg
Adapted slightly from Momofuku
Soy Pickled Mushrooms
2 cups sliced mushrooms (shiitake is best)
1/2 cup raw sugar
1/2 cup tamari sauce
1/2 cup white wine vinegar
1 large chunk of fresh, peeled ginger
Bring all ingredients to boil in a saucepan, then let simmer for half an hour before draining the liquid and allowing the mushrooms to cool.
Quick Pickled Cucumbers
1 large cucumber
2 tbsp raw sugar
1 tbsp sea salt
Slice the cucumber thinly and mix well with the salt and sugar in a bowl. Let sit in the fridge for at about 30 mins then rinse.
Ginger Scallion Sauce
2 cups scallions (mostly just the green part)
1/2 cup finely grated fresh ginger
1/4 cup grape seed oil
1 1/2 tsp tamari sauce
2 tbs brown rice vinegar
1 tsp sea saltCooked ramen noodles
Squares of nori and extra chopped scallions for garnish
Sriracha to taste
Make your noodles according to the package directions and set aside to cool. You can serve this dish hot but I prefer it cold. Mix all the ingredients for the sauce together and let sit for at least 20 minutes, so that the flavours can blend together. When everything is ready, mix the sauce with the noodles and add the pickled cucumbers and mushrooms. Fry an egg for each portion right before you are ready to serve and top the bowl with a square of nori and some more chopped scallions. Add some sriracha, to taste. Makes about 4 portions, or less depending on how hungry you are.

I know I've posted pictures of the beach near our place so many times before, but I can't really get enough of it. When I'm back in Canada, I go for a beach walk almost every day and I never get tired of it since it always looks a bit different. I miss the mountains we have at home but I've come love this beach too, with it's little sand dunes and the view of windmills and Sweden across the water. Mark also proposed here, while we were nestled in the grassy dunes, watching the black waves and the reflection of the stars. We went for another long walk along the beach on Saturday, as it was one of the brightest days we've had in a while. I loved the silvery light, it made even the benches look pretty. I think I should try to make it a habit to start the weekend off with a long walk each Saturday morning.

On Sunday my pretty Macedonian/Belgium (so exotic!) friend Martina and I went to the Glyptotek, an art museum full of ancient sculptures and early Impressionist paintings. I'm doing pretty good on my resolution so far to visit more museums and cafes while I am living here! It helps when they are free, and the weather is terrible. I especially love the garden atrium at the Glyptotek, it feels like you are on vacation in a dreamy, tropical place. Sitting on the courtyard terrace having tea and wandering around looking at all the art was the perfect way to spend a rainy afternoon. We definitely weren't the only ones who thought so, it was great to see the museum so full of families and students sketching. Again I marvelled at how modern a lot of the pieces looked, thanks to their great exhibition design. I loved the groupings of sculpture, the interesting choice of colours for wall paint to set off the Danish Golden Age paintings, and their example of how ancient art would have looked before all the paint wore off. I also love the gorgeous architectural details of the building itself, it's so stunning.

Another thing we did when Whitney and Vitaly were here - we went to Tivoli. Tivoli is kind of a combination of the classiest garden and amusement park you can imagine, done in a cute Scandinavian way. This year their theme was a "Russian Christmas", which I was overly excited about. It didn't even matter that it was way past Christmas, I still went around squealing and photographing pretty much everything in sight. It was also perfect for W & V, since they are Russian and wannabe Russian, respectively. I especially loved the little fairy tale houses, the dancing bears (!) and all the crazy decorations. We walked around the whole evening from dusk on, sipping gløgg to keep warm and taking in the last of the holiday merriment.
